Our rillettes are made with Chlamps opercularis scallops caught in France, Scotland or the Faroe Islands. The recipe consists of scallops, crème fraîche, butter, white fish fillets and white wine. Serve on toast, with a squeeze of lemon zest or a few drops of truffle oil.
