Fishing Seasons

Sturgeon fishing extends throughout most of the year, except during the hottest months in Iran and the heart of winter along the northern shores of the Caspian Sea, when ice makes all activity impossible.

Sturgeon spawning — or maturation — periods occur only every two to three years.

The most productive seasons are spring and autumn. The spring season begins in late February or early March and ends in mid-May. It alone accounts for 90% of annual Sevruga production, as well as 50% of Asetra and Beluga production.

In both quantity and quality, the spring catch surpasses the autumn season, which runs from mid-September through December. This exceptional yield is explained by the biology of the sturgeon and the post-winter climatic conditions.

Spring is therefore considered the finest season, producing around 80% first-quality caviar, compared with only 20% in autumn.
