O

for Omelette

Norma’s in New York has an omelette on the menu called the «Zillion Dollar Frittata» that costs $1,000 (just over €900)! The ingredients: scrambled eggs, lobster, and 10g of caviar.

Originality

Caviar houses aren’t the only ones to include ‘caviar’ in their name. Many brands tap into the upscale image the dish enjoys. For example, street-wear brand Cocaine & Caviar is a gobbled up by jet-setters around the world, while, on a more whimsical note, the chain of gourmet market-cum-cafés Caviar & Banana is whipping up a storm in Charleston. In France, a food truck named Caviar & Coquillette can be seen in the Nièvre area. Maybe you have crossed its path...

Osetra

Acipenser Gueldenstaedtii is a medium-size sturgeon with an average length and weight of 1.5-2m and 80-200kg respectively. It is easily recognisable thanks to its short, stocky head; underneath its somewhat pointy nose, a retractable snout helps it suck up plants, small fish and crustaceans to eat. It takes at least 9 years before the female first lays eggs, which are used to produce the largest range of caviar of all, including Gold Osetra. Osetra caviar has fairly large, evenly-sized, amber coloured grains. To the eye, the perfectly stacked eggs shine with flashed of charcoal grey and deep gold. Their creamy texture gives way to stunning nutty after notes and hints of briny sea-water.
