for Qiandao

Qiandao Lake, aka Thousand Island Lake, is located in Chun’an County, in China, some 160km west of Hangzhou. The lake’s water is some of the purest in the world; naturally rich in oxygen, it is ideal for sturgeon farming. It is here that local sturgeon species – Huso dauricus and Acipenser schrenckii – are farmed to produce the highly prized, chef ’s-favourite Kristal caviar.

Quantity

No need to slather it on! A little bit a caviar goes a long way. For an aperitif or if it’s your first time, a mere 10g per person should suffice, however a starter with soft poached eggs or fish tartar calls for a slightly larger 20g tin. An aperitif with friends would require at least a 30g or 50g tin for 4 people. Obviously, aficionados and food lovers alike can always go above and beyond 100g for a truly exceptional event.
