For Ukha
In Russia, in particular around fisheries, one can often find people serving ukha, a traditional soup that combines sturgeon and other fresh fish (salmon, pike…) with leek, potatoes, aromatic herbs, pepper, and other spices.
In fish farms, sturgeon live the first few years of their lives in large lakes, fresh water dams, ponds or pools. At the age of 3-4, ultrasound examinations are carried out to determine the sturgeon’s sex; the technique is also used to check on roe development inside the fish.
Caviar needs no trimmings. A simple spoon in wood or mother-of-pearl is all you need. For those who like more pomp and circumstance, a special caviar serving dish always makes quite an impression. The base is made of a dish that is filled with crushed ice onto which the tin of caviar is placed so as to maintain optimal freshness. The caviar can also be placed into a small, transparent bowl that is placed in the main dish. Cristal serving sets are the most popular due to the glimmer of the glass and the shine of the caviar bouncing complementing each other. Another utensil, less luxurious but quite practical: the caviar cooler. Made out of wood or stainless steel, a frozen gel pack is placed inside to keep the caviar cold as long as necessary. To choose between practicality and aesthetics is a matter of personal preference.
