The Huso huso is the largest of all sturgeon species. In the wild, it can reach up to 6 metres in length and weigh up to 1,000 kg. A carnivorous and discreet species, it lives in the depths of the Caspian Sea, making it particularly difficult to catch.
Beluga farming, especially from the Danube, is extremely limited. Today, very few farms raise this species, as it takes at least 15 years before the fish produces its first eggs. Beluga caviar therefore remains an absolute benchmark of luxury and exclusivity.
The golden rule? Simply savour the moment, without worrying too much about convention. A few simple recommendations, however, will help you experience caviar at its very best.
Caviar is at its finest when enjoyed simply on its own, accompanied by warm blinis and a light touch of crème fraîche.
