An Ancestral Delicacy
In the past, preserving fresh caviar pearls was a challenge. Before the Industrial Revolution of the 19th century and the invention of refrigeration, pressed caviar was the most common way to enjoy this delicacy. Sturgeon roe was salted in brine, drained, firmly pressed, and then shaped inside a cloth.
The resulting caviar cake was stored in wooden barrels and, in some cases, simply dried under the sun. Prepared this way, caviar could be preserved for more than a year.
Today, Kaviari revives this traditional recipe through its Transmontanus caviar, offering a rediscovery of this ancestral savoir-faire.

**Allow it to reveal its full character**
Remove the caviar from the refrigerator around ten minutes before serving. If it is too cold, its aromas remain restrained; if too warm, it loses some of its freshness and subtlety.
**Handle it with care**
Avoid sudden changes in temperature and unnecessary handling to preserve the delicate texture of the pearls and the richness of their flavour.
**Choose the right spoon**
Use a mother-of-pearl or bamboo spoon to preserve the purity of the caviar's taste. Metal spoons — particularly silver — can oxidise the roe and subtly alter its flavour.
Caviar is at its finest when enjoyed simply, accompanied by warm blinis and a light touch of crème fraîche.
