Nicknamed the "Lake of a Thousand Islands", Lake Qiandaohu, where the Huso dauricus sturgeon are raised, is regarded as one of the purest lakes in the world. The fish thrive in an environment that closely resembles their natural habitat, providing ideal conditions for their development.

The result is generously sized, golden pearls with a remarkably smooth, creamy texture and exceptional refinement.

The most important thing is to enjoy caviar with pleasure, without worrying too much about convention. A few simple gestures, however, will enhance the tasting experience and allow its full character to shine.

Remove the caviar from the refrigerator around ten minutes before serving. If it is too cold, its delicate aromas remain subdued; if too warm, it may lose some of its freshness. Handle it gently and avoid sudden changes in temperature to preserve the silky texture of the pearls.

Always use a mother-of-pearl or bamboo spoon. Metal spoons, particularly silver, can oxidise the roe and alter its delicate flavour.

Caviar is at its finest when enjoyed on its own. To accompany it, a few warm blinis and a light touch of crème fraîche are all that is needed. Dauricus caviar

This caviar comes from the sturgeon "Acipenser baerii", a fish native to Siberia. The latest addition to our range, this caviar has small to medium-sized grains, in dark gray tones, with brilliant reflections. Low in iodine and moderately salty, this caviar will appeal to fine palates with its subtle complexity. It develops unique, iodized flavors with a silky aroma.
