The extra virgin olive oil plays a crucial role in the ageing process of these sardines. Carefully hand-packed on a precise date — hence the term “vintage”, borrowed from the world of wine — these artisanal sardines are intended to mature over time, for 2 to 3 years or even longer. As they age, their texture becomes more delicate and melt-in-the-mouth, while their flavours deepen and intensify.
These vintage sardines are best enjoyed on toasted bread, with a creamy risotto, or alongside steamed potatoes.
