Sprats are small silver fish belonging to the Clupeidae family, alongside sardines and herrings. Native to the cold waters of Northern Europe, they are found primarily in the Baltic Sea, the North Sea, and along the Atlantic coastline.
Smoked sprats are delicious served on toasted bread with lemon cream and rocket, or prepared as rillettes.
They also work beautifully in quiches or pizzas, adding a distinctive and original flavour.
