Sea urchin roe, also known as coral or gonads, is the edible part of the sea urchin — a marine creature often nicknamed the "sea hedgehog" — and is naturally rich in minerals and antioxidants.

Sea urchin roe is best enjoyed raw, simply served on a slice of toasted bread.

It also adds exceptional depth of flavour to sauces, omelettes, and risottos.

In Sicily, it is traditionally used to dress pasta, combined with cream, shallots, and white wine.
